What I Ate Vol. 1

If you went through my blog and counted all the times I mentioned my hate for meal planning, it's probably well into the double digits. Figuring out what to eat while balancing budget, kids, and diet adjustments is, in short....agony.

And sometimes? I just want to see what was on other people's plates to give me some ideas. I don't necessarily need a recipe or instructions...I just want to be inspired so that I'm not stuck in the pit of "the same 5 things my kids won't cry about me serving them". Ya know?

So I thought, I'm gonna start snapping simple photos of things I eat and compile them into...let's say, meal planning inspiration posts. A jumping off point of sorts to remind ME of things to eat later, and to hopefully give you some clues, too. If I help one person not sit in frustration over planning a meal, I will be happy.

I started snapping these photos a while ago, and have just been an awful blogger. So some of these things go back to April...woopsie!



Grilled avocado with quinoa, corn & cherry tomatoes & fruit.





Salad with: romaine, apples, walnuts, gorgonzola & leftover grilled chicken.




Homemade sesame chicken with broccoli & rice.
(I used this recipe, but skipped the hoisin sauce to make it GF)



Cobb Salad with: hard boiled egg, avocado, turkey bacon, cucumbers, 
shredded cheddar, cherry tomatoes, and chickpeas on romaine.



Strawberry Spinach Salad with: spinach, strawberries, goat cheese, 
sliced almonds, and strawberry yogurt dressing.



My Grandma's Lasagna!



Greek salad with: romaine, tomatoes, cucumber, black olives, 
feta, greek marinated chicken, and greek vinaigrette.



Hawaiian Chicken Kebabs (chicken, red peppers & pineapple with bbq sauce), 
Southwest Quinoa Salad, and steamed broccoli & cauliflower.



Oatmeal Peanut Butter & Jelly Pancakes & turkey bacon.
(I shared the recipe for these here.)



Taco Bowl with: taco seasoned ground turkey, leftover southwest quinoa salad,
tomatoes, avocado, shredded cheddar, and lettuce (underneath).



Good 'ol honeydew melon. I live for it!



Sriracha Quinoa Bowl with: shredded rotisserie chicken,
quinoa, broccoli, avocado & sriracha.



Homemade GF Veggie pizza, dill & vinegar cucumbers, bell pepper strips & strawberries.



Pulled BBQ chicken salad - I make pulled chicken in the crock pot and pile it
ontop of a salad that has lettuce, tomato, cucumber,
sometimes bell peppers, and italian dressing.



It's Summer, so, roasted marshmallows on the reg.



Chia & Millet Toast with PB & banana and turkey bacon.



Breakfast scramble with: roasted red potatoes, scrambled eggs, 
sausage, and shredded cheddar.



Over medium egg & swiss on GF toast & strawberries.



Spinach, Tomato & Swiss omelet, homefries & fruit.



Tutti Fruity Muffins (recipe here)



GF Turkey Club (made with both turkey bacon & sliced turkey) & fruit. 



Chocolate ice cream with melted peanut butter and hot fudge - 
my personal favorite ;)



I made Reese Witherspoon's Mud Pie Trifle for a family dinner 
(but took out the gluten) and it was a big hit!
PS - I used double the amount of pudding & cool whip.



And finally...allll the kebabs!

I mentioned in my July Currents that I started Weight Watchers again recently, so the things I've been eating have changed a bit for sure! So the next time I post one of these, they should be mostly WW friendly foods. Let me know if you add anything to your meal plan!
