Nacho Night (for #dinnerfails)!

The other night, our dinner plans didn't work out, and this is not exactly a rare occurrence for us. Something comes up, or we run out of time, or plans fall through, and we sometimes have to scramble. Usually, this means I throw together whatever we have, toss in some leftovers, and call it a day. (Or a dinner.)

So this past weekend, after searching high and low, I decided to make it a nacho night. We had leftover chili, leftover taco meat, tortilla chips, shredded cheese, and some avocados. So after a few rounds of microwaving, we were ready for dinner!

The nice thing about this, too, is that it didn't make very many dishes. We all sat around our plates and just shared. I forgot to take a picture of the taco meat and cheese nachos, but that's what the kids had. Matt and I ate the chili ones.

When those plates were cleared, I brought out the next round of nachos - apple nachos! These are a favorite in our house. You just slice up a few apples, warm up a few scoops of whatever nut or seed butter you like and drizzle it on, then top it with mini chocolate chips and whatever else you like! I added sliced almonds - we've also done shredded coconut before.

Everyone loves apple nachos - you'll never go wrong with those! We had just gone apple picking that morning, too, so they were freshly picked and local!

You can totally go crazy with the nacho night theme...there's so many kinds, plus different types of toppings and cheese - you could even do a make your own nacho bar set up! And it's so great for using up leftovers. I think I'm going to add this one to a pretty often rotation!

By the way, as are all of our meals - they're totally gluten free! Even though tortilla chips are usually already GF, we like to buy quinoa or black bean chips so they're just a bit healthier. You can make these dairy free, too by using Daiya cheese for the regular nachos and the Enjoy Life chocolate chips on the apple nachos. Make them nut-free, too, buy topping your apple nachos with sun-butter and skipping the almonds.

So many options, plus allergy flexibility! My fav.

  1. I do the same nachos but add homemade caramel!!! Have not made them since last fall - yay for apple season :)

    1. Yum! I love caramel on apples...I'll have to try that on apple nachos, too!!
