(GF) Christmas Cookies 2016

As Christmas approached this year, we were all a little concerned about what our new diet would do to our traditional Christmas cookies. We were hesitant to give up our tried and true recipes, but also didn't want to ruin them with gritty flours and too many changes. So we did our best!

We kept three recipes the same (cutouts, peanut butter blossoms, and crispy peanut butter balls) with the exception of the flour. For that, we swapped out all purpose with Bob's Red Mill 1 to 1 flour with awesome results.

We also picked one new recipe - this one. They are really good! (Although better warm. I'd pop mine in the microwave for 5 seconds.)

On the Sunday before Christmas, we baked all 4 of our recipes back-to-back, including frosting the cutouts. It was a marathon of cooking and cleaning, but we had fun - and a lot of yummy treats to show for it!

I'm still finding rogue sprinkles here and there!

BTW, if you're wondering, Matt is a blue belt in tae kwon do, and he has green eyes ;)
