
I know that coconut isn't at the top of everyone's favorite list, but it's way up there for me & Matt. We love any and all things coconut! Coconut Macaroons are surprisingly easy to make and one of the less naughty cookies on our menu. That is, until I dip them into chocolate. But it's worth it. The original recipe I used had a drizzle of chocolate on them - but that's just not enough for me :)
Here's my recipe:
1 14oz Bag of sweetened coconut
3/4 Cup Sugar
6 Tbspns Flour
1/4 Tspn Salt
4 Egg whites, lightly whisked
1 Tspn Vanilla
1/2 Cup semi-sweet chocolate chips
Preheat oven to 325.
1. In a small bowl, combine egg whites and vanilla.
2. Combine dry ingredients in a large bowl, mix well, and stir in wet ingredients.
3. Drop on trays in teaspoonfuls. Bake about 17 minutes - until set and slightly golden.
4. Melt chocolate and dip each one halfway into the chocolate and chill to set the chocolate.
