Muffin Chronicles: a failure and a victory

Ya win some, ya loose some.

Apparently, this is also true of muffin recipes.

I love a good yummy treat turned Weight Watchers friendly, because WW and I...we go back. I've faithfully counted points twice now, after each baby, to get down to my happy place weight. Once I get there, I ease up a little - but I still keep a good bunch of WW recipes in my arsenal so I don't go all carbochocoicecreamoaholic (copyright!) and unravel my hard work.

I was on the hunt for muffins this week - hoping for something different to go with my morning coffee. I'd seen this "minute muffin" flying around Pinterest, and the thought of doing ANYTHING in only 1 minute is appealing to me. Heck, to any mom - amiright?

Minute Muffin


So, I was in a rush to get out of the house this morning, and decided this would be the perfect time to try it out. I was pretty excited seeing my oatmeal and brown sugar and blueberries in my mug, waiting for a couple more ingredients before taking a 60 second spin in the 'ol microwave. SO CLOSE to a muffin!

I added my egg and milk, and popped it in. After a minute went was soupy. Like, about to make scrambled eggs, soupy. So I put it in for another minute.

Still runny. My minute muffin was turning into a minuteS muffin.

This time, I scooped it out of the mug, put it on a plate, and microwaved it for 30 seconds. This seemed to do the trick. Only......... it looked like this:

Does that...look remotely edible? Seeing it right now, and knowing I ate the whole thing, makes me want to question my sanity. It looks like a crazy mashup of play-doh colors. 

The outcome was this: microwaved scrambled eggs with oatmeal and blueberries in it.

Bizarre. Totally the weirdest thing I've ever had for breakfast.

Was there supposed to be some sort of flour? Or baking powder or something? Did I miss a paragraph? 

Needless to say, my muffin craving was not fulfilled. So I turned to my favorite WW resource, Skinny Taste, to find an alternative. Enter: Insanely Good Blueberry Oatmeal Muffins.

Only, I'm bad, and remember, only half-hearted about WW at this point, so I made Insanely Good Chocolate Chip Oatmeal Muffins.


My batch made an extra, so, ya know....I had no choice but to eat it. It would have totally messed up my muffin pyramid, and we couldn't have that! It was very yummy, and I cannot wait to have one with my coffee in the morning! 


  1. I want those chocolate chip oatmeal muffins!!!!!!!!!!! But the eggy blueberry muffins sorta freak me out! LOL! You are total WOMAN for trying that!

  2. The chocolate chips muffins look awesome! I think the oatmeal counteracts the chocolate, right? ;)
