Apricot-Balsamic Chicken

I picked this recipe because it reminded me of a classy version of a recipe I once heard shared by The Office celeb Jenna Fischer - Sweet & Sticky Chicken. I still want to try her version at some point, probably when I'm not counting points. Check it out here (recipe starts around 4 minutes):

Apricot Balsamic Chicken (by sounded more fresh and healthy, but as they comment in the video: I was expecting something a little more hilbilly. As it turns out, it was very chinese-take-out-done-healthy. It was a complete coincidence that we served it with rice & broccoli (just what we had on hand), but that made it seem even more like Chinese. It was an all-around hit, try it!
