I really love having something baked and yummy for cold weekend mornings, and if I can make it somewhat healthy - even better! With Fall officially here, I've been craving pumpkin everything, and we have a ton of apples after apple picking recently, so I tried to find a recipe that included both.
And I found these: Pumpkin-Apple Harvest Muffins from The Rising Spoon
I skipped the cranberries because I wanted the apples to stand alone against the pumpkin and oatmeal, but I kept the recipe mostly the same otherwise. I added in just a little bit of coconut oil, because....while I know it wasn't totally needed, it felt really strange not having any sort of oil in it. I know....that's what the purees were for, but, ya know. I wanted it. ;)
1 cup of 100% pumpkin puree
1/2 cup of brown sugar
1/2 cup of unsweetened applesauce
1 cup whole wheat flour
1/2 cup old fashioned oats
2 1/2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 an apple, cored and diced
(Original recipe has 1/4 cup dried sweetened cranberries)
+ Preheat to 375
+ Mix all the dry ingredients into a large bowl & set aside.
+ Mix all the wet ingredients together in another bowl, then add into the dry ingredients and stir well.
+ Stir in apple chunks.
+ Fill muffin cups (I used cupcake papers sprayed with coconut oil spray and they basically fell out when they were done!), and bake for 18-20 minutes.
These little guys are SO full of everything fall, and so gooey and moist - they are perfect with coffee!
