It's cookie time again!
This particular cookie is a huge hit with my entire family. EVERYONE loves these, and - fair warning - they are addicting. They are the kind you grab two of, and then go back 20 minutes later for 2 more, aaand repeat all day long. Maybe make a double batch? Or don't. Maybe don't make them at all. ;)
They taste sort of like a super-moist brownie (sorry, to everyone who just cringed when I said moist). But they are rich and chocolately and just....insanely good. I got this recipe from my Dad, and I'm not entirely sure if it originated with my step-Mom, or her family, or where...I just know it came to me from that side of the family. And will stay here, for eternity. This cookie and I have an unhealthy and deep relationship.
And, bonus, they're also the easiest cookie ever. Crazy, easy.

1/4 Cup Butter, softened
1 8oz pkg Cream Cheese, softened
1 Egg Yolk
1/4 Tspn Vanilla
1 pkg Devils Food Cake Mix (any brand)
1. Preheat the oven to 350.
2. Cream the butter and cream cheese until smooth and well combined.
3. Blend in the egg yolk & vanilla, then add the dry cake mix in small portions at a time. Mix until well combined (batter will be very sticky).
4. Drop on a cookie sheet in heaping tablespoonfulls.
5. Bake for 8-10 mins. I suggest 8 min...slightly under-done makes them even more incredible.

And SO GOOD!
They don't always come out the prettiest - they are weird shapes, and always sort of lumpy and bumpy, but it doesn't at all matter. I've thought of dressing these up sometime....maybe sprinkling powdered sugar on them, or mixing in chopped up hunks of Andes candies to them...yum. But they are fabulous on their own!
