And I'll tell you, I felt the same way at first.
I think this started as a "use up the leftovers" sort of appetizer, but Matt grew up with this celery as a precursor to Thanksgiving dinner every year. We spent the first few Thanksgivings of our relationship with our families, so his Mom continued to make it for him. But when I took over, or rather - we started celebrating with my mom and we all divided up the tasks, I decided to make this one of them.
There's leftover celery from the stuffing, and leftover cream cheese from the chocolate peanut butter pie. Have some paprika in your pantry? Of course you do. Then you're all set.
3-4 Stalks of Celery
1/2 brick of Cream Cheese
1. Spread the cream cheese into the celery like you would with PB for ants on a log.
2. Sprinkle the filled stalks with paprika.
3. Cut into bite size pieces and arrange on a plate.
Um, easiest thing you'll make all day? Yep.
Bonus: My kids....my veggie hating til the day they die, kids.....LOVE these! And I can't even get them to eat ants on a log. Go figure!
